03 - 1 cup cherry tomatoes, halved
04 - 1 cucumber, diced
05 - 1 red bell pepper, diced

07 - 3/4 cup feta cheese, crumbled
08 - 1/2 cup Kalamata olives, pitted and sliced
→ Herbs
09 - 1/4 cup fresh parsley, chopped
10 - 2 tablespoons fresh mint, chopped
→ Dressing
11 - 1/4 cup extra-virgin olive oil
12 - 2 tablespoons freshly squeezed lemon juice
13 - 1 teaspoon dried oregano
14 - 1/2 teaspoon sea salt
15 - 1/4 teaspoon freshly ground black pepper
# Steps:
01 - Combine quinoa and water in a medium saucepan. Bring to a boil, reduce heat to low, cover, and simmer for 15 minutes or until water is absorbed. Remove from heat and allow to cool to room temperature.
02 - In a large bowl, combine the cooled quinoa with cherry tomatoes, cucumber, red bell pepper, red onion, feta cheese, Kalamata olives, parsley, and mint.
03 - Whisk together the olive oil, lemon juice, dried oregano, sea salt, and black pepper in a small bowl.
04 - Pour the dressing over the salad ingredients and toss gently until evenly coated.
05 - Taste and adjust seasoning if necessary. Serve chilled or at room temperature.
