# What You Need:

→ Mango Layer

01 - 1 cup ripe mango, peeled and diced (fresh or frozen)
02 - 1/4 cup plain Greek yogurt
03 - 1 tablespoon honey (optional)
04 - 2 to 3 tablespoons water, as needed

→ Passion Fruit Layer

05 - 1/2 cup passion fruit pulp (approximately 3 to 4 passion fruits)
06 - 1/2 cup plain Greek yogurt
07 - 1 tablespoon honey (optional)

→ Orange Juice Layer

08 - 3/4 cup freshly squeezed orange juice
09 - 1/4 cup plain Greek yogurt
10 - 1 teaspoon honey (optional)

# Steps:

01 - Clean and set aside three blending containers or rinse the blender between uses.
02 - Combine mango, Greek yogurt, honey, and water in the blender and process until smooth and thick. Pour evenly into the bottom of two clear glasses.
03 - Blend passion fruit pulp with Greek yogurt and honey until creamy. Carefully spoon or pour this mixture over the mango layer to create a distinct separation.
04 - Blend freshly squeezed orange juice with Greek yogurt and honey until smooth. Gently layer this on top of the passion fruit mixture.
05 - Tilt the glass slightly and slowly pour each layer using the back of a spoon to prevent extensive mixing, achieving a clear ombré presentation.
06 - Optionally, adorn with a slice of fresh fruit or sprig of mint, and serve immediately.

# Expert Suggestions:

01 -
  • It looks like you spent 20 minutes plating when it actually took 10
  • The yogurt makes it substantial enough to pass for breakfast
  • Frozen fruit means you can make this year round without hunting down fresh mango in December
02 -
  • Frozen fruit is not optional for the layered look fresh fruit makes everything too thin
  • The tilt and pour over a spoon technique is what keeps layers from mixing into a single color
  • These separate if left sitting so serve within 15 minutes for the full ombré effect
03 -
  • Blend each layer a little thicker than you think you need thin layers mix together
  • If you only have one glass make all three layers in separate cups first then assemble
  • The back of a spoon is your best friend for slowing down the pour and protecting previous layers
