# Steps:

02 - In a large skillet over medium heat, melt butter. Add onion, carrots, and celery, sautéing for 5 to 6 minutes until softened.
03 - Stir in minced garlic and cook for 1 minute until fragrant.
04 - Sprinkle flour over vegetables and stir continuously for 1 to 2 minutes to create a roux.
05 - Gradually whisk in chicken broth and heavy cream. Simmer, stirring constantly, until the sauce thickens, about 4 to 5 minutes.
06 - Add diced chicken, peas, thyme, oregano, red pepper flakes if desired, and season with salt and pepper. Stir well and remove from heat.
