# Expert Suggestions:

01 -
  • You get all the creamy chocolate satisfaction of a bakery cheesecake with a fraction of the guilt
  • The protein content means one slice actually keeps you satisfied instead of leaving you hunting for more snacks an hour later
02 -
  • Do not skip blending the cottage cheese long enough, or you will end up with a grainy texture instead of that smooth, luxurious finish
  • The center should still wobble slightly when you take it out of the oven because it continues cooking as it cools
03 -
  • Room temperature ingredients blend together much more smoothly, so set everything out about 30 minutes before you start mixing
  • The cornstarch might seem like a strange addition, but it is what gives the filling that perfect cheesecake structure without being heavy
