# Steps:

01 - Preheat oven to 350°F. Grease a 9x13-inch baking dish with butter or nonstick spray.
02 - Arrange half of the sliced potatoes evenly in the prepared dish.
03 - In a large saucepan over medium heat, melt butter. Add onion and sauté until softened, about 4 to 5 minutes. Add garlic and cook for 1 more minute.
04 - Sprinkle flour over the onions and garlic, stirring constantly for 1 to 2 minutes to create a roux.
05 - Gradually whisk in the warm milk and cream, stirring continuously until smooth and slightly thickened, approximately 3 to 4 minutes.
06 - Stir in Dijon mustard, salt, black pepper, and smoked paprika.
07 - Remove from heat and whisk in shredded cheddar and Gruyère cheese until completely melted and smooth.
08 - Pour half of the cheese sauce over the first potato layer. Arrange remaining potatoes on top and pour remaining sauce evenly over.
